Traditional Flat New Mexico Hatch Green Chile Chicken Enchiladas

As I’ve always said, “If you don’t like green chile, there must be something wrong with you!”. Looking for the gold standard recipe in green chile chicken enchiladas? Look no further. If you’re a fan of green chile, this is one of the most celebrated meals by most New Mexicans. I’ve literally never seen leftovers for this particular dish.

Ingredients

  • 1 (3-4 lb) chicken; cooked, meat removed
  • 1 cup chicken stock or chicken broth (boil chicken scraps, then strain)
  • 1 cup heavy cream
  • 2 med Onions; chopped fine
  • 1 1/2 cups diced Hatch green chile (roasted, deskinned, seeded)
  • 1 lb Cheddar cheese; grated
  • 12 Corn tortillas
  • 2 tbsp cooking oil

Preparation

Flash fry the corn tortillas with the cooking oil, then set aside. Make a sauce with heavy creme, chicken broth, onions, Hatch green chile, and chicken. Alternate layers of tortillas, sauce, cheese in a 13-inch casserole dish. Bake uncovered at 350 for 1 hour or until bubbly. (You may use 4 chicken breasts instead of the whole chicken.)
