Traditional Spanish New Mexican Torta de Huevo Recipe

 
This is my absolute favorite traditional New Mexican lent dish. My grandmother would make this once or twice a year. She was from Las Vegas, New Mexico, where a lot of old New Mexican traditions got started. Now that my grandmother is no longer with us, we have continued the tradition of this New Mexican Favorite!

Yield: 4-6 servings

Frying time: Approximately 5 minutes

Temperature: Medium-High

Ingredients

  • Shortening, Lard or Butter
  • 1/2 teaspoon salt
  • 3 large farm fresh eggs
  • 1 Recipe Basic Red Chile*
  • 1 tablespoon flour

1. Heat 1-inch of shortening in a heavy pan on medium-high heat.

2. Separate eggs and beat egg whites until stiff, but not dry. Beat in egg yolks, flour, and salt.

3. Drop mixture by teaspoonful into hot shortening. Fry until golden. Drain on absorbent towels and add to chile sauce.
