Pan De Maiz Con Chile Verde (Green Chile Cornbread)

(November 18, 2015)—If you like cornbread then you’ll love this New Mexican version of it. Wouldn’t this be perfect to soak up green chile stew?

Green Chile Cornbread

Yield: 16 one-inch squares

Baking Time: 35-40 minutes


Temperature: 425°F

 

Freezes Well

  • 1 cup flour
  • 2 eggs
  • 1/4 cup sugar
  • 1 cup milk
  • 1 tablespoon baking powder
  • 1/4 cup shortening
  • 1 teaspoon salt
  • 8 ounces cream-style corn
  • 1/4 teaspoon garlic powder
  • 2 tablespoons chopped green chile*
  • 1 cup yellow cornmeal

1. Combine first six ingredients in a med-sized mixing bowl.

2. Add eggs, milk, and shortening to flour mixture and beat until smooth. Add corn and pepper and blend well.

3. Pour mixture into a greased, 8-inch baking pan and bake in a 425°F oven for 35-40 minutes, or until cornbread is golden brown.
