New Mexico Green Chile Stuffed Crust Pizza Recipe

Before I started making pizza, I was a  little intimidated. How to make the right sauce, the right crust, tips, and tricks, etc.

There was just a lot that I wanted to know…

When it comes to pizza, for me, it has to be just right. After a few failed attempts at getting the crust right, I was finally on the home stretch of making pizza. The sauce isn’t very hard to make at all. In fact, it’s even better if you keep it simple. And, well, the toppings, you can just about put anything. What makes this pizza pretty amazing, is it has our wonderful New Mexico green chile on it, as well as stuffed in the crust. How can you go wrong, right? Right!

Pizza Dough Recipe (makes two 12inch pizzas)

  • 1 packet dry active yeast (1/4 ounce)
  • 1 teaspoon granulated sugar
  • 1 teaspoon kosher or coarse salt
  • 2 tablespoons olive oil, plus extra for coating the bowl
  • 3 cups all-purpose flour

Pizza Dough Instructions

Place the yeast and sugar in a large bowl, and add 1 cup of warm water, and let sit until small bubbles start to form, about 10 minutes. Gently stir in the salt and olive oil. Add in the flour gradually, mixing until the dough pulls away from the side of the bowl. (I use a rubber spatula to do this)
Turn the dough out onto a lightly floured cutting board of other work surface and knead the dough until it is smooth (about four minutes). You can also use a standing mixer with the dough hook if you have one.
Place the dough in a well-oil bowl and cover it with a damp kitchen towel. Let the dough rise in a warm place until it has doubled in size, about an hour or an hour and a half.
Punch down the dough and divide it into two equal sized balls. Each ball is an individual pizza. Let it sit for another ten minutes. Begin shaping the dough into a circle on a lightly floured surface, then stretch it out further, and keep going until it is as large and as thin as you would like.

Pizza Sauce Recipe (enough for 2 pizzas)

  • 12oz. Tomato Paste
  • 1 Tablespoon Granulated Roasted Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1/2 Teaspoon Salt
  • 1/2 Ground Black Pepper
  • 1 Teaspoon Italian Seasoning
  • 1 Cup Water

Pizza Sauce Instructions

Add all ingredients to a saucepan on a medium heat. Simmer, stirring constantly, until sauce becomes smooth. Remove from heat.

New Mexico Green Chile Stuffed Crust Pizza Recipe

Now that you have your dough and your sauce, you can begin building your pizza. Good thing it only takes 15 minutes to cook. It will make the whole process worth it. You’ll be excited to know that now you can make a pizzaria style stuffed crust pizza at home, and even better, with New Mexico green chile.

Ingredients

  • 2 1/2 cups shredded Mozarella Cheese
  • 1 pizza dough
  • 1 cup pizza sauce
  • 4 tablespoons Olive Oil
  • 1/2 cup New Mexico Green Chile (roasted, peeled, seeded, chopped)
  • 1/4 cup sliced Premium Pepperoni
  • 3 tablespoons Flour

Instructions

  • Preheat oven to 475˚
  • Oil 12 inch pizza pan with about 2 tablespoons of olive oil with a basting brush.
  • Knead dough on a surface dusted with 3 tablespoons flour until it becomes smooth. The roll or press flat in a circular shape.
  • Transfer dough to oiled pizza pan. Stretch beyond inner circumference of pizza pan.
  • Apply about half of the mozarella cheese to entire edge of dough. Then, repeat with a 1/4 cup of the New Mexico green chile.
  • Fold edge of dough over cheese and green chile until it’s all been concealed, then restretch dough to the edge of pan.
  • Apply about 1 cup of pizza sauce and spread evenly over entire center of pizza.
  • Apply remainder of Mozarella cheese, evenly over the pizza sauce. (You may need to grate more cheese if you like cheese as much as I do.)
  • Apply any additional ingredients, this recipe calls for sliced pepperoni and green chile. Use remaining New Mexico green chile. As with the cheese, you might add more if you’d like.
  • Put into oven on center rack for 15 minutes. (add 5-7 minutes for 2 pizzas)
  • Let cool off for 5-10 minutes.
  • Serve!
