Basic New Mexico Green Chile Stew Recipe

If there’s one thing that most New Mexican’s love, it’s green chile stew. There’s always one person that you know that makes the best green chile stew. If you’ve always wanted to make it but didn’t know how it’s just about the most simple New Mexican recipe you can tackle. Also, it doesn’t take many ingredients.

  • 2 lb Lean beef round or pork
  • 2 tbs Oil
  • 3 Medium potatoes; diced
  • 1/2 c Onion; chopped
  • 1 Large garlic clove; minced
  • 2 teaspoons Salt
  • 6 New Mexico Green Chile Pods (Roasted, Peeled, Seeded, chopped) *About 1 cup frozen green chile
  • 2 Medium Tomatoes(*Optional)

Preparation Instructions

Cube meat, sprinkle with salt and fry until brown in oil. Transfer to crockpot. Add potatoes, browned meat together with onion, garlic, salt, green chile and enough water to cover. Cook for 6 hours on high setting or 8 hours on low setting. Either way you do it, it’s going to taste delicious.
