Basic New Mexico Red Chile Recipe

If you love New Mexico chile, then you probably like red or green more than one another. If you’re one that likes red chile, then here’s a recipe you can’t go wrong making. All it requires is a few ingredients and you can just about put it on anything. Meet your new favorite sauce!

New Mexico Red Chile


  • 20 (X-Hot, Hot, Medium, or Mild) New Mexico Red Chile Pods
  • 1/4 cup minced Garlic
  • 1 tablespoon Salt* (to taste)
  • 3 cups water or (beef or chicken broth)


  1. Remove all stems, seeds, and pits thoroughly
  2. Soak Red Chile Pods in a pot of hot water. I like to soak mine in a large saucepan on a high heat (faster).
  3. Add 3 cups Fresh Water, Red Chile Pods, Garlic and Salt to a blender.
  4. Puree red chile in blender until it has reached a smooth texture.
  5. Strain out any seeds or large pieces that did not blend.
  6. Transfer all contents to a large saucepan and simmer on med-low heat for 1 hour.
  7. Serve!
