If there are two things that belong together, it would be Hatch green chile and cheese. If you’re cold on a winter day, this soup will definitely warm your soul, and most importantly, your tummy.

Ingredients for Hatch Green Chile and Brie Soup Recipe
- 1 cup Chopped onions
- 1/2 cup Chopped celery
- 4 tbsp Butter
- 2 tbsp Flour
- 1 can (16-oz) chicken broth or chicken stock (tastes better)
- 2 cups Half-and-Half or Heavy Cream
- 1/2 lb Brie
- 1/2 cup Hatch Green Chile or other New Mexico Green Chile (Roasted, Peeled, seeded) chopped into half-inch sized pieces
- Salt and pepper to taste
Hatch Green Chile and Brie Soup Preparation
Saute onions, celery in butter for 5 minutes. Wisk in flour. Then add in half-and-half and broth. Stir thoroughly. Add brie to soup in small pieces. Stir until brie is melted (about 10 minutes). Add Hatch Green Chile, simmer for another 2 minutes and serve.
