Hatch Green Chile Chuck Roast Recipe

Despite the odds, most of the things that New Mexicans cook have some form of chile added to it. With that pretty much being the golden rule, here is a traditional recipe with a little New Mexico flair. If you like New Mexico green chile, then you’ll be a fan of this recipe. Hatch Green Chile Chuck Roast

Ingredients for Hatch Green Chile Chuck Roast Recipe

  • 1/2 c Vegetable oil
  • 5 lb Chuck roast (4 to 6 lbs.)
  • 1 lg Onion, chopped
  • 1 cup chopped hatch green chiles (roasted, peeled, seeded)
  • 12 oz Beer (1 can)
  • 1 large tomato (diced)
  • Salt
  • Pepper
  • Garlic salt

Hatch Green Chile Chuck Roast Preparation

In a deep skillet or Dutch oven, heat oil hot, sear roast on both sides. Add onion, tomato, and chiles, turn roast to cover fully with chiles and onion. Pour beer around sides of roast. Sprinkle with salt, pepper and garlic salt; cover with tight lid. Place over low heat. Cook 1 1/2 to 2 hours. It will fall apart and is SO GOOD! Makes 6 to 8 servings
