Green Chile Turkey Melt Recipe

(November 23, 2016)—If you’re New Mexican, then you know we go big when it comes to doing thanksgiving dinners, and by that, I mean “mass quantities”. And you know what that means? Lots of turkey leftovers! Here is one of those really satisfying meals that you can make on the go. A rather tasty green chile treat.

If you want yours to look better than the one photographed, follow these instructions.


  • 1/2 cup leftover turkey
  • roasted garlic powder
  • onion powder
  • pepper
  • 1/2 cup sautéed red onions
  • 2 slices monterrey jack cheese
  • 1/4 cup Salted Butter
  • 2 slices sourdough bread
  • 1/4 cup New Mexico Green Chile (med/hot/xhot)


Turn stove on to a medium heat. Add a teaspoon of butter to frying pan and add onions, green chile, and turkey. Stir ingredients till onions have wilted and have become cooked. Set pan aside. In a separate pan, add another teaspoon of butter and turn heat to a medium heat. Spread the remaining butter onto one side of each piece of bread. Place pieces of bread, butter-down, and add a slice of monterrey jack cheese to each piece of bread. Once the cheese has melted and bread begins to brown, add the turkey, green chile, and onion mixture on top of one side of the bread. With a spatula, place the other piece of bread on top of the mixture. This completes the green chile turkey melt. You may now enjoy your meal.
