Mama Garcia’s Spicy Green Chile Macaroni and Cheese

YIELD: 12 Servings

Ingredients

  • 2 cups elbow macaroni (cooked)
  • 8 ozs Heavy Cream
  • 1 Cup Pepper Jack Cheese
  • 1 Cup  Hot New Mexico Green Chile (Roasted, Peeled, Seeded, Chopped)
  • 1 pound lean ground beef
  • 2 tablespoons flour
  • 1/2 cup water
  • Salt
  • Pepper
  • 1 tablespoon Chimayo Red Chile powder
  • 1 Large Onion (diced)
  • 1 Large Clove Garlic (chopped)

Instructions

  1. Boil macaroni at high heat. Add uncooked ground beef to large saute pan. Once your Macaroni is finished boiling. Strain. Then add the pepper jack cheese, heavy whipping cream, onion, green chile, and garlic. Season ground beef with salt and pepper. Strain cooked ground beef, then add to macaroni mixture. Add half cup water and flour and simmer until desired thickness. Serve hot.
