Green Chile Omelette For Dummies

- 8 eggs
- 1 Cup New Mexico Green Chile (roasted, peeled, chopped)
- 1/2 Onion (chopped finely)
- 1 cup cheddar cheese
- Add eggs and New Mexico green chile and diced onion to large mixing bowl. Beat eggs and green chile till thoroughly mixed. Set aside. Grease pan with butter or cooking oil and put on a med heat till pan is hot. Pour egg mixture into pan. Once eggs are cooked through about 75%, add cheese. Add salt and pepper to taste. Once cheese melts, serve with homemade flour or corn tortillas. Enjoy!
