When you think about New Mexico green chile, you think about chile rellenos, enchiladas, or a topping for any New Mexican food. Less often, you find green chile being used in a sweet capacity. Most have heard of green chile apple pie and other infused dishes, but green chile jelly? Yes, finally a peanut butter and jelly sandwich for adults, or maybe even on a bagel with cream cheese, and specifically designed for New Mexicans. Enjoy!

1 cup Hatch Green Chile or comparable New Mexico green chile
1 c White vinegar
6 cups Sugar
1 package Certo or pectin
Green food coloring
Put green chiles in a blender or food processor and blend, mix with sugar and vinegar and put into a pan and bring to a boil. Reduce heat to a nice simmer and cook about 30 minutes or until it begins to thicken. Skim foam off the top. Remove from heat, add pectin and a small amount of food coloring. Stir and pour into containers. Will keep indefinitely in a refrigerator.
