Hatch Green Chile Corn Chowder / Just a Pinch
Ingredients
- 3 cupsĀ fresh cut corn from the cobb
- 4 tbsp Margarine
- 1-1/2 cupsĀ Hatch Green Chile (Roasted, peeled, seeded, chopped)
- 2Ā Med Onions Chopped Finely
- 4 med Potatoes, peeled, cut into 1/4-1/2 inch cubes
- 2 cups Heavy Cream (16oz)
- 2 cups Chicken stock or chicken broth
- salt
- pepper
- 1 tsp garlic powder
Preparation
You can puree two cups of corn in the blender if corn is mature. If sweet and tender use as is. Saute onions in margarine, stir in the corn, potatoes, and stock and bring to a boil. Simmer until potatoes are soft. Add the chile and cream. Salt and pepper and garlic powder to taste. Then, let simmer till thickened.
