Hatch Green Chile Meatloaf

(September 30, 2016)—Here is one of those recipes that is easy to make and very gratifying. Not only is it simple to make, it’s also delicious. Next time you’re in the mood to make meatloaf, try this New Mexican take on an old recipe. You may also use substitute corn flakes for bread crumbs.

YIELD: 6 Servings

COOK: 1 hr 20 mins


  • 1 1/2 pounds lean ground beef
  • 1/2 pound ground pork
  • 1/2 cup corn flakes cereal
  • 1/4 cup onion finely chopped
  • 1 large egg
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup hot New Mexico green chile (roasted, peeled, and chopped)


350°. Lightly oil a 13x9x2-inch baking pan. In a large bowl combine the beef, pork, corn flakes, onion, green chile, egg, salt, pepper. Shape into a loaf and place on the prepared baking pan. Bake the meatloaf for 1 hour and 15 minutes.

Dump red chile over the top, and serve with mashed potatoes.
