Creamy Chile Con Queso Soup

Ingredients

  • 5 tbsps butter
  • 1 1/2 cups onions
  • 3 garlic cloves
  • 1/2 tsp dried oregano
  • 4 cups chicken broth
  • 2 cups potatoes
  • 1 tsp ground black pepper
  • 7 ozs green chile
  • 1 tsp fresh cilantro
  • 1/2 cup heavy whipping cream
  • 1 1/2 cups shredded monterey jack cheese
  • 1 tsp onion powder
  • Salt to taste

Instructions

  1. Melt butter in medium saucepan over medium heat. Add onion, garlic and oregano; cook for 10 minutes. Add chicken broth, potatoes and pepper; bring to a boil. Cook for 20 minutes or until potatoes are tender. Add green chiles, cream and cheese. Heat until cheese is melted. Garnish with cilantro.
