Creamy Chile Con Queso Soup

Ingredients
- 5 tbsps butter
- 1 1/2 cups onions
- 3 garlic cloves
- 1/2 tsp dried oregano
- 4 cups chicken broth
- 2 cups potatoes
- 1 tsp ground black pepper
- 7 ozs green chile
- 1 tsp fresh cilantro
- 1/2 cup heavy whipping cream
- 1 1/2 cups shredded monterey jack cheese
- 1 tsp onion powder
- Salt to taste
Instructions
- Melt butter in medium saucepan over medium heat. Add onion, garlic and oregano; cook for 10 minutes. Add chicken broth, potatoes and pepper; bring to a boil. Cook for 20 minutes or until potatoes are tender. Add green chiles, cream and cheese. Heat until cheese is melted. Garnish with cilantro.
