Calabacitas con Huevos Pie

(September 7, 2016)—New Mexico—When it comes to New Mexican food, it’s all about the flavor and most of the time it’s because we add green chile to everything. Well, how about we add some huevos to the equation? Why? Well, because it takes some huevos to be a New Mexican and this classic dish goes great with them as well.

Green Chile Squash Pie / Merry Powell

YIELD: 6 Servings


  • 2 cups summer squash
  • 1 teaspoon salt
  • 3/4 Cup Corn
  • 1 1/2 Cups New Mexico Green Chile
  • 4 eggs
  • 8 ounces cheddar cheese shredded
  • 1/8 teaspoon pepper
  • 1/4 cup butter
  • 1 Large Onion chopped finely
  • 1 Clove Garlic chopped


Cook the squash in a saucepan and use butter to saute on a medium heat till tender, but not too soft. Add to Large mixing bowl. Add the New Mexico Green Chile, Corn, Chopped Onion, 6 oz of the shredded cheese, Garlic, and Salt/Pepper. Mix thoroughly and add filling to pie crust Bake uncovered for 40 minutes at 375º F, add remaining cheese, then bake for an additional 15 or until cheese and crust is a golden brown.
