Harissa (Red Chile Paste) Recipe – If you’re a spicy food addict like most New Mexicans are, then you’ll love this Harissa recipe. Especially, if you love to add quick spice to your life.
Ingredients
- 20-25 Dried New Mexico Red Chile Pods
- 4 medium-sized tomatoes
- 2 Cloves garlic
- 1 tsp Ground coriander
- 4 tsp Vinegar
Preparation
De-stalk, and de-seed the chiles. Let soak in warm water for 15-30 minutes, or until softened. Then, half the tomatoes. Put everything, except vinegar into the food processor or blender and blend it till it has a very fine texture. Simmer on a medium temperature for 10-15 minutes. Let cool, then add vinegar, mix thoroughly, then let rest for 24 hours. Enjoy!. If you want, you can do it the old-fashioned way and use a pestle and mortar instead of a blender/food processor.
