Green Chile Seafood Paella Recipe

Green Chile Seafood Paella

(June 8, 2016)—If you’re from New Mexico, then you like green chile. Well, probably about 99% of New Mexicans can’t get enough of it. I know I can’t. Seafood is also my favorite. Why not bring the two together? Here are two great things coupled together. It’s called Green Chile Seafood Paella. Enjoy!


Ingredients (for 4 servings):

  • 1 cup of Arborio rice
  • 10 ounces of black mussels
  • 10 peeled and deveined shrimps
  • 2 tomatoes, cut to large cubes
  • 1/2 cup of frozen green peas
  • 1/2 cup Green Chile, Roasted, chopped & Peeled
  • 1 chopped red bell pepper
  • 1 chopped onion
  • 1/2 cup of white wine
  • 3 cups of chicken broth
  • 2 garlic cloves, sliced
  • 2 teaspoons of fresh thyme
  • 2 tablespoons of fresh parsley
  • Pinch of saffron
  • Salt and pepper to taste
  • Olive oil


How to make the seafood paella:

Sauté the chopped onion and garlic with olive oil in a paella pan. Add the rice and cook for 2 minutes while stirring. Pour in the wine, chicken broth salt and pepper and saffron. Simmer for about 15 minutes. When the rice is ready, add the vegetables – peas, bell pepper and tomatoes. Cook for couple more minutes before arranging the mussels and shrimps above the rice. Cover the pan (you can use tin foil) and cook 5-7 minutes. Remove the foil and add sprinkle parsley before serving.
