Creamy Chicken and Chile Casserole

Ingredients

  • 8 boneless chicken breast (skinless boneless chicken breast halves)
  • 1 /4 tsp salt
  • 1 /4 tsp pepper
  • 8 ozs shredded mozzarella cheese
  • 4 ozs sliced mushrooms (drained)
  • 10 3/4 ozs cream of chicken soup (undiluted)
  • 2 tomatoes (peeld and diced)
  • 4 ozs green chiles (chopped)
  • rice (hot cooked)

Instructions

  1. Sprinkle chicken breasts evenly with salt and pepper and place in a lightly greased 11×7 inch baking dish. Combine cheese and next 3 ingredients, and pour over chicken. Sprinkle with chiles Bake, uncovered at 350 for 35 minutes. Serve over rice
