Chile Verde Seco (Green Chile Sauce from Dried Chile)

This sauce is absolutely amazing! It’s deep flavor from the green chile, with the refined taste of drying the green chile, make this sauce one to savor in New Mexico. Although you won’t find too many people making this sauce (only because the recipe is not very mainstream), you’ll be glad that you did.I know I am!

Chile Verde Seco

Yield: 3-4 cups

Cooking Time: 20 minutes

Temperature: Medium, Low

Freezes Well


  • 10-12 dried green chiles
  • 1 cup canned tomatoes
  • Hot water (optional)
  • 1 pound pork steak, cubed
  • 1/4 teaspoon garlic powder
  • 2-3 cups water
  • 1/2 teaspoon salt



1. Place chile in a large mixing bowl and cover shile with water. Set aside for 5-10 minutes.

2. Remove stems and seeds from chile. Chop chile finely and set aside.

3. Brown pork in a medium-sized skillet on medium heat. Drain and add chile, 2-3 cups of water, tomatoes, and seasonings. Simmer at low heat for 10-15 minutes.
