Cheesy Green Chile Chicken and Rice Enchiladas

Ingredients

  • 3/4 cup heavy cream
  • 1 cup sour cream
  • 1/2 cup cottage cheese (curd)
  • 3 ozs cream cheese (cubed)
  • 3 cups chicken (cubed cooked)
  • 3 cups rice (cooked)
  • 1 1/2 cups shredded monterey jack cheese (mozzarella)
  • 1 cup New Mexico green chile (roasted, peeled, and chopped)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt
  • 2 cups shredded lettuce
  • 2 tomatoes (diced)

Instructions

  1. Using a food processor or a blender, process the heavy cream, sour cream, cottage cheese and cream cheese till smooth In a large bowl combine the sauce, rice, chicken, cheese, green chile, and garlic powder, onion powder, and salt. Then pour into a greased 2-qt baking dish. Bake, uncovered at 350 for 25-30 minutes or until heated through. Cover with red or green New Mexico chile.
