The New Mexico Green Chile Con Queso Recipe

If you want a world-class tasting snack with our favorite flavor, green chile, then this is the perfect snack for you. Which can easily become a meal if you’re not careful (this stuff is good).You can substitute cheddar cheese, but in my opinion, this one tastes much better. This is the perfect dip if you’re having guests over as well as a snack while watching your favorite sports team. Whatever it may be, you’ll be hooked after the first bite.


Ingredients

  • 1 medium sized white onion, chopped finely
  • 2 tablespoons cooking oil
  • 1 lb. (16 oz.) Velveeta cheese, cut into 3/4 inch cubes
  • 1 cup heavy cream, whole milk, or half & half (approx. 8oz)
  • 1 large tomato, chopped
  • 1 cup X-Hot Hatch Green Chile or similar New Mexico chile (roasted, peeled, seeded, and chopped)
  • salt* to taste
  • 1/4 teaspoon ground black pepper*

Preparation

In a frying pan, add about two tablespoons of cooking oil and heat over a medium-high heat. Add onion. Constantly turn the onion till translucent. Add tomatoes to frying pan. Turn once or twice, then add to a saucepan with the New Mexico chile, cheese cubes, whole milk, and black pepper. Put over a medium heat and simmer till cheese and milk have melted together thoroughly. Serve immediately with warm tortilla chips (I usually make my own while the cheese is melting). To make your own tortilla chips, use about 8 corn tortillas. Cut into quarters. Heat about 1/4 inch of corn oil in a frying pan over a high heat. Once oil has become hot (important: otherwise the tortillas will get soaked with oil), place tortilla strips (about half) into hot oil. Fry till they have become rigid or have begun to brown. Place on a plate with a paper towel, add salt while still hot. Repeat with second half of tortilla strips. Now, it’s time to enjoy this great snack!
